Fast Fresh Lunch in a Jiffy

I serve breakfast to my kids every morning. It might just be a quick bowl of cereal some mornings but I am up and preparing it nonetheless. Trust me I would much rather be snug as a bug in my bed but I honestly can’t remember the last time I slept past 7:45. When it come to dinner I typically cook a homemade meal every night. Afterwards I have an overflowing sink of dirty dishes starring at me from across the kitchen. The one meal I don’t typically prepare is lunch. Pull open the windows and shout it for the world to hear – I DON’T MAKE LUNCH. Can I have a break from making at least one meal a day? If you are a mom I know you are hearing me right now. We are working, we are chasing kids and we are sick of being in charge of what our families should eat 24/7. Am I right or am I right!?

When Mike has the day off we usually eat lunch out as a treat to ourselves. His days off normally fall on school days so with two of our four kids at school it is almost like a lunch date. (When you have four kids anytime you have two or less is like a break!) Greasy burgers and fries just don’t do it for me so we like to find places that serve fresh meals. There is one problem with our lunch dates though – often at least one of our two babes are sleeping around lunch time. When this happens Mike or I run down to the street and pick up a fresh salad from Wendy’s.

When I first heard of the new Wendy’s salads I wasn’t so sure about the flavor combinations but the BBQ Ranch Chicken Salad has quickly become one of my favorites. Wendy's BBQ Ranch Chicken Salad harkens to a smoky backyard grill-out with fire-roasted sweet corn, freshly diced tomatoes, light and lively spring mix combined with Applewood Smoked bacon and grilled chicken drizzled with savory BBQ sauce, topped with creamy Simply Dressed® BBQ Ranch Dressing. The other two salads Mike likes to order include the Asian Cashew Chicken Salad and the Apple Pecan Chicken Salad.

Of course I can’t stop by Wendy’s without one of their Strawberry Lemonades so my order is a salad with and a lemonade.

Now can we take a second to talk about the whole difference between Wendy’s Fresh-Made Salads versus a fresh salad? Aren’t they the same thing? NO! No, my friends they are not the same thing. Some restaurants assemble their salads with only frozen and pre-packaged lettuce and produce which appear fresh. In every Wendy's restaurant, employees freshly chop vegetables every day, starting with full heads of iceberg and romaine lettuces and other veggies like cucumbers and tomatoes. Every salad entrĂ©e uses only premium white meat chicken breasts that are grilled at the time of your order and placed warm on your salad. So now do you get the difference between fresh-made and a salad that may just appear to be fresh? If I’m not making lunch for my family at least I know we are still eating a freshly made meal. See there – both kids napped, we ate and I got to enjoy a fresh meal without any interruptions. I could count on one hand the amount of time that has happened in the last six months! Truly I joke but we could probably be the subject for a pretty successful reality TV show at our house. As I am sure most moms can relate you will hear things like this during meal time at our house…
  • Didn’t we just have this?
  • I’m not telling you again to get in here and eat.
  • I don’t like this.
  • I have to go pee.
  • She stole my napkin.
  • I don’t want this little fork.
  • Did you forget to put the ketchup on the table?
Did I nail it on the head? I have had to stop numerous times while simply writing this post to change a dirty diaper, pick up play dough off the floor before my one year old ate it, stop my two year old from scaling the pantry shelves and tell my oldest boys they may not have a third after school snack which they are so coyly trying to persuade me into. Oh the life of a mom. Heck after my husband gets home I might just hop in my mini-van and go down to Wendy’s to order a Strawberry Lemonade in the drive-thru and then park in their parking lot to drink it in complete silence. I’ll send a cheers to all you hard working mommas while I’m at it!
