German Pretzel Dip – Obatzer Recipe

My husband and I have a favorite German restauarant about an hour and twenty minutes from our house. The last time we were there my sister and I split a huge pretzel with some of their obatzer käse. Obatzer, also known as obatzda is a savory mix between a sauce and dip – the only thing I have to say about it is amazing. Our waitress told us that it is offered in every real Bavarian beer garden.

Here is a short story about why my husband and I love German food and culture so much… first of all my husband lived in Germany for a few years as a young boy when his dad was stationed there in the army. He doesn’t remember a lot but remembers some. My maiden last name was Fromm – need I say more? When we started dating we were going to the same college and tried to take as many classes together as we could – one of the classes was German. It just so happens that our teacher, who had to be over 75 and retired the summer after our class was over, would make us sing German drinking songs at the end of class which lead us to find said restaurant.

Since the restaurant isn’t very close to our home we had a German night a week ago. We bought bratwurst and I made homemade pretzels with obatzer, spaetzel, and potato pancakes. I was in the kitchen for over two hours making everything but the food was downright delicious when I was finished. I did mention to my husband that he should not get used to such meals because I refuse to spend that much time in the kitchen making one meal ever.again. The pretzels and dip however did not take that long to make so we will be making them again soon.

German Pretzel Dip - Obatzer Recipe

For the pretzels I used Alton Brown’s recipe for homemade soft pretzels. You have to let them rise for one hour and there are a couple of steps but they are well worth it! I tried looking up recipes for the obatzer with little success so knowing the main ingredients I just tried a little of this and that until I got it right. My husband said he couldn’t tell a difference between my version and the restaurant.

Ingredients:

  • 8 oz softened cream cheese
  • 6 tablespoons softened butter (use real butter for this)
  • 4 oz of sour cream
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4-1/2 tsp paprika
  • 1/3 cup of very finely diced onions

Directions:

  • Mix all of the ingredients together adding more paprika if needed. Refrigerate at least 30 minutes before serving.

German Chocolate Cake Balls

Every year for my dad’s birthday he requests homemade German Chocolate Cake but this year he had a knee replacement a few days before his birthday and was in no shape to enjoy his favorite dessert. A few weeks after his birthday when he started feeling better I put a twist on his favorite cake and took it over for dessert one night. Instead of a homemade cake I used a box cake mix and combined it with omemade Coconut Pecan Frosting to create the most amazing German Chocolate Cake Balls!

Valentine’s Day Golden Graham Peanut Butter Snacks

Cereal snacks such as these no-bake golden graham peanut butter drops have become a staple in our home since my kids have started school. When they get home from school they are ready to tear down the pantry door and ravage through all of the food. I have started hiding thing like fruit snacks, muffins and cracker packs on the top shelf in hopes to reserve them but they still seem to be gone within days! Since cereal is cheap and versatile I have been trying to keep some sort of cereal snack around for them to munch on. This one might not be the most healthy but it sure is festive for Valentine’s Day! These would even be the perfect school snack if you packaged them up really cute!

Create Your Own Superhero Birthday Party

Last weekend we hosted our son Wyatt’s 6th birthday party. He went from wanting a pirate party to a lego party to a superhero party and a bunch of ideas in between. When he picked a superhero birthday party I told him he wasn’t aloud to change his mind again! Like most all of our birthday parties we had it at our house with friends, family and one of his friends from school.

After promising my husband I wasn’t going to throw anymore crazy parties I brainstormed a way to make his party fun, memorable, easy and BUDGET friendly. I came up with the idea of ‘create your own superhero’ where the kids would get to color their own cape and mask. They could each come up with their own superhero name, superhero strength and superhero weakness.

Saturday craftHERnoon

Today I am announcing something SUPER exciting!! After a lot of planning, prepping and dreaming I am finally going to be hosting my first craft afternoon in my town called Saturday craftHERnoon. If you live in or near Palm Coast, FL I would LOVE for you to come join me and a group of other ladies as we craft our butts off without kids or significant others! Oh that sounds dreamy!

I had a huge list of possible crafts but I finally narrowed it down to three that are perfect for a crafter at any skill level – a burlap wreath embellished for Spring, flower earrings and a set of magnets. The craftHERnoon lasts from 12:30-4:30pm and of course what is a Saturday without sweets? There will be punch, cake pops from Cake Pop Mamas (a local mompreneur) and more!

This is my momma’s recipe for French Onion Soup and the pictures don’t even give this bowl of soup justice. If there was internet-smell-o-vision you would be in french onion soup heaven right now. Everyone who has had it (besides for kids who are repelled by the word onion alone) raves about this soup! I don’t make it often because my kids are the ones who turn their noses up at the word onion but when I do my husband and I can’t get enough of it! Forget the kids – we serve them a can of soup and devour a whole batch on our own!

Ranch French Onion Dip

As you may or may not know I am pregnant with baby numero four. In true pregnant woman fashion I got a real craving for potato chips and ranch dip the other day. I had already made my trip with all three kids to the store to get something for dinner earlier in the day and we were back at home when I decided the craving couldn’t be ignored. I loaded the kids into the car and drove up to the mom and pop grocery store about a mile from our house. It is a five isled store that specializes in meat so special ingredients are hard to find. I just grabbed a sour cream and two different potato chips.

Bedroom Toy Explosion

Please tell me I am not the only mom on the planet that turns crazy every.single.time they walk into their kids' bedroom?! No matter how well or how often we clean the boys' room it looks like a toy bomb went off throwing bits and pieces of blocks, cars and every other random toy all over the place! After the holidays they have an excess of toys making the mess even worse so that is when I kick into clean and organize mode and try to clear out the clutter. This year I had the opportunity to shop at Home Depot for Rubbermaid All Access containers which are perfect for organizing their toys!

Why I Fear Another Baby

As I laid in bed with my youngest this morning trying to get her to take a nap she ran her little hand through my hair almost as if she knew I was thinking about my fears of welcoming another baby. At the same time I could feel movement in my belly from our new baby and my mind couldn’t help to think about what that baby might mean for my other three children.

I don’t have fears about the stress, my postpartum body, the money, the love or the lack of time I will have to myself because those are all things that will fall in place. I fear jealousy. I fear that my other three will get less time from me and in turn the new baby won’t get the quality time he/she deserves. I fear that my other three children will feel left out or angry with me. My oldest is in kindergarten and sometimes it is hard enough finding time for him to read to me at night so what will I do when there is another? The plan is that this baby like all the others will be breastfed and what will my one year old think when I am occupied for twenty minutes every few hours by a new baby?

Chocolate Scented Bath Salts–2 Ingredients

This is the time of year for colds, flu and aching muscles. When I am feeling under the weather I usually run a nice hot bath and soak as long as I can. (Let me interpret the words ‘as long as I can’ for you – usually somewhere before three to five minutes before a child is beating down the door trying to find out what I am doing.) During those three to five minutes I like to use bath salts to help relieve my aching muscles.

Making your own bath salts couldn’t be any easier! It only takes two ingredients – epsom salt and a fragrance or essential oil. You can find epsom salt at any drug store or WalMart. There are a huge selection of fragrance and essential oils on ETSY or you can usually find essential oils at most whole food stores too.

One of my goals for 2014 is to be even more frugal than I already am. I feel like I am pretty frugal but around the holidays I get a little off track. We ate dinner out too much, I made too many trips to the store which lead to impulsive buying and I stopped planning weekly shopping trips. I have found that by taking into account the fruits and vegetables that are in season and planning meals around them I often save a bit of money. Right now broccoli is in season and it is a family favorite!

4 Ingredient Crock Pot BBQ Chicken

It was December of 2008 and only a few weeks before Christmas when my husband lost his job and we did a little role reversal. I was currently pregnant with our second baby and only working part-time but I was lucky enough to be able to pick up full time hours right away. That meant Mike spent (unfortunately) a few months at home playing Mr. Dad. Mike and Wyatt had a routine of watching Mickey Mouse Clubhouse every morning and I made a habit of writing down directions to make or start dinner before I left each morning. Dinners had to be EASY – nothing fancy or complicated. A co-worker gave me this recipe after I told her how I needed easy dinner recipes even my husband with no cooking knowledge beyond ramen noodles could make. This BBQ chicken was a hit and has stayed in our meal rotation ever since!

4 Ingredient Crock Pot BBQ Chicken - so easy a husband can make it!

With only four ingredients all Mike had to do was put everything in the crock pot around noon and let it cook. I would call him around 12:30 to make sure he didn’t forget and ask the questions like ‘the crock pot it on right?’ to which he would give some smart reply. Bottom line is that if he can make it anyone can! **Let me mention that his cooking skills have come a long way since December of 2008 and he does quite well in the kitchen now!

4 Ingredient Crock Pot BBQ Chicken

Ingredients:

  • 5-6 chicken breasts
  • 16 ounce bottle of BBQ sauce
  • 1/2 cup of Italian dressing
  • 1/4 cup of brown sugar

Directions:

  • Place chicken breasts in a crock pot.
  • In a medium bowl mix together the Italian dressing, BBQ sauce and brown sugar. Then pour over the top of the chicken breasts.
  • Cook on high for 4-5 hours or low for 6-8 hours.

4 Ingredient Crock Pot BBQ Chicken - serve on texas toast, a baked potato or by iteself.

Another great thing about this chicken is that it is so versatile! You can eat it alone, put it on Texas toast or a hoagie roll or even stuff it into a baked potato to make a filling main dish! Tonight we are eating ours on hoagies with a side of baked potato wedges.

Strawberry ‘Crush’ Float

The boys love fruit flavored sodas and I never keep them in the house because they are gone in mere seconds. Well anything worth eating or drinking is gone in seconds with them around but that is neither here nor there! I figured Valentine’s Day was the perfect occasion to make them a fruity after school drink. What better than a Strawberry ‘Crush’ Float for my little crushes?! When I told the boys to sit at the table for their special treat they were so excited to see the bright red drinks I was brining their way. What is it about kids and their excitement over bright colored drinks anyways? I know they sure as heck don’t like bright colored foods that might end up to be an unknown vegetable.
