Homemade Cannoli Filling

My first job was a waitress at an Italian restaurant where I was introduced to desserts such as Tiramisu and the Cannoli. I can’t leave an Italian restaurant these days without ordering one or the other. A few months ago a new pizza and wings place opened up down the road from our house and we found ourselves eating there once a week during my pregnancy. Each visit would end with me ordering a cannoli to go. Their cannolis are so amazing.
Fast forward to today and I am not making very many trips out because I haven’t quite figured out how to balance all four kids at a restaurant yet. There are too many kids saying ‘mommy’ or crying and I get overwhelmed. I had not forgotten about all those cannolis though – and I had been craving them like crazy! I figured there had to be a cheaper and easier way to get my cannoli fix so I decided to test out my own idea for a cannoli filling using Coffee Mate French Vanilla creamer and it turned out so yummy.

I took a poll on the Poofy Cheeks facebook page to see which recipe I should share (tiramisu or cannoli) and cannoli won! I used Coffee Mate French Vanilla creamer which kept the recipe down to four ingredients and added the perfect amount of classic vanilla flavor.

Homemade Cannoli Filling:

  • 2 cups whole milk ricotta cheese
  • 1 cup confectioners sugar (powdered sugar)
  • 1/2 cup Coffee Mate French Vanilla creamer
  • 1/2 cup mini semi-sweet chocolate chips


  • In a medium bowl add ricotta cheese and whip with a spatula until it is smooth and creamy.
  • Stir in powdered sugar and Coffee Mate French Vanilla until well blended.
  • Add chocolate chips and stir.

***I then put the filling into a pastry bag and snipped the end to easily fill the cannoli shells. I bought the cannoli shells at my local Publix bakery for $.60 each.
