Grilled Veggie Skewers

Do you want to know what I LOVE about having dinner that has to be cooked on the grill? My husband is in charge of all grilled meals! That means I get to take a rest from cooking the bulk of the meal and only have to whip up a side dish or two… and that alone my friends makes my entire day. Do you know what I love even more? When our sides ALSO get cooked on the grill and I get to do nothing!

Seasoning and Tips for Grilled Veggie Skewers

Today I am sharing the seasonings we use to season the veggies and a few tips on how you can get perfectly cooked veggies every time.

TIP: Put the same kind of veggie on each skewer. We do this because some vegetables take less or more time to cook. When you put a variety of veggies on one skewer you often get undercooked over overcooked burnt to a crisp veggies. When you have the same veggie you can just leave it on or take it off when they are ready!

SEASONING: For the seasoning we use garlic powder, seasoning salt and everglade seasoning. We put all the veggies onto the skewers and sprinkle the seasonings while rotating the veggies around to coat all sides. Toss the skewers on the grill, turning frequently and remove when they are cooked to your liking! We like our veggies to have a little char but to still have a bit of a crunch too.

PS – Have you tried grilled pineapple? I had it for the first time a few weeks ago and it is amazing! The sound of grilled fruit just never sounded appealing to me but the flavor is SO good! I must say it is one of my new summer favorites.
