Did you know that you can make cookies out of a box of cake mix? You totally can! These chocolate cake cookies are yummy, like boarding on I-need-to-let-my-pants-out-because-I-ate-too-many-cookies kinda yummy. Sprinkle a few Andes Peppermint Crunch baking chips, my latest obsession, on top of your cookies before you throw them in the oven and you'll be in heaven. I warned you!
Peppermint Chocolate Cake Cookies - (makes approximately 2 dozen depending on cookie size)
Instructions Step 1: Preheat oven to 350 degrees. Beat eggs, oil and chocolate cake mix together. It will be very sticky, but that's okay!
Step 2: Roll into 1 inch balls and place on a cookie sheet covered with parchment paper.
Step 3: Lightly flour the bottom of a glass and flatten cookies. Sprinkle cookies with Andes Peppermint Crunch Baking Chips.
Step 4: Bake for 8-10 minutes. Enjoy!
