Chicken & Feta Tabbouleh from Buttonwood Cottage

Hey folks! While Kelsey and her family are moving to their new home Kelsey has given me the floor to share a little 'Summer Break' recipe with you. But first, I'll tell you a bit about me. I'm Kasey and I blog about happiness, handmade, and all things crochet over at Buttonwood Cottage.  I also make hand crocheted accessories for women and babies, those can be found in my shop on Storenvy. On my summer breaks I like to spend the weekends at the shore (that's right folks I'm from New Jersey, we say shore here), out by the pool, or BBQing with friends. After a day out in the sun the last thing I want to do is slave in a hot kitchen cooking for an hour, so today I'm here to share a quick and tasty summer recipe. The best part? This meal is perfect for preparing ahead, the flavors get better the longer it sits. So...here it goes!

Chicken and Feta Tabbouleh

  • 6 oz bulgar, cooked using package directions
  • 2 cups cooked boneless skinless chicken breast
  • 1 cup chopped tomato
  • 1 chopped cucumber
  • 3/4 cup fresh parsley
  • 1/2 cup crumbled feta cheese (I used reduced fat since this weekend we enjoyed a ton of ice cream at the boardwalk)
  • 1/3 cup finely chopped green onions
  • 1/4 cup chopped fresh mint (toss any extra fresh mint in some fresh brewed ice tea -yum!)
  • 1/2 lemon 
  • 1 table spoon extra-virgin olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black pepper

The best thing about this recipe is how easy it is to prepare.

  1. Prepare bulgar wheat according to package directions. Typically...place 3/4 cup uncooked bulgar wheat into a bowl and cover with 1 cup boiling water. Stir and then let sit for 15 - 20 minutes, until liquid is absorbed.
  2. Combine all other ingredients in a large bowl (chopping veggies is the most time consuming thing here). Stir. Add cooked bulgar and toss gently to combine.

"I like everything but the cucumbers and tomatoes." - Zoie (Hint: chop the tomatoes and cucumbers into tiny bites and the kiddoes are more likely to eat them!)
