As you may know I am growing a garden. This is the third year and the best by far! I have actually been able to grow and pick enough to MAKE things. The past few years I planted too late in the Florida summer and most of my plants fried up in the sun.
Today I picked a ripe tomato, a half dozen jalapeno peppers, and had some cilantro ready too! I added a few other ingredients to my grocery list to whip up a batch of homemade garden salsa. I found a lot of different recipes online, but I ended up just making things up as I went along. The end product was refreshingly delicious!
- 3 tomatoes – seeded and finely diced
- 1/2 of a small red onion – finely diced
- 1-2 jalapenos – seeded and finely diced
- 1 garlic clove – finely diced
- 6-10 cilantro leaves – finely diced
- juice of 1/2 a lime
- 1 tsp salt
- 1/2 tsp pepper
Combine all ingredients and let them set for 30 minutes. Add more salt as and lime juice as needed. I prefer to serve mine room temperature because the flavors are stronger – but refrigerate in a closed container if you are making it the night before. **(My husband absolutely hates spicy foods so I stick with one jalapeno, but if you like things sort of hot use two! Just make sure to discard the seeds!!)
